This creamy zuppa toscana recipe blends sausage, potatoes, and kale into a rich, comforting soup inspired by Olive Garden’s classic.
Ingredients
1 lb Italian sausage
4–5 medium russet potatoes, sliced
1 large onion, diced
4 cloves garlic, minced
6 cups chicken broth
1 bunch kale, chopped
1 cup heavy cream
Salt and pepper to taste
Optional: red pepper flakes
Instructions
1. Brown sausage in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Pour in chicken broth; add sliced potatoes and boil until tender.
4. Stir in chopped kale and simmer for 5 minutes.
5. Lower heat, add cream, and simmer gently for another 5 minutes.
6. Season with salt, pepper, and red pepper flakes. Serve hot.
