Description
This retinol carrot salad is a quick, skin-friendly dish made with shredded carrots, citrus dressing, and healthy fats to boost vitamin A absorption.
Ingredients
4 large carrots, peeled and grated or julienned
1 tbsp olive oil or avocado oil
1 tbsp lemon juice or apple cider vinegar
1 tsp honey or maple syrup
¼ tsp sea salt
Pinch of black pepper
Optional: chopped parsley, sunflower seeds, or avocado cubes
Instructions
1. Peel and shred carrots using a grater or julienne peeler.
2. Place shredded carrots in a mixing bowl.
3. In a separate small bowl, whisk together the oil, lemon juice, honey, salt, and pepper.
4. Pour the dressing over the carrots and toss to coat evenly.
5. Let sit for 5–10 minutes to allow flavors to develop.
6. Top with parsley, seeds, or avocado if using.
7. Serve immediately or refrigerate up to 3 days.
