This recipe for garlic butter steak bites with parmesan cream sauce is a weeknight lifesaver in my home. It brings back memories of my grandmother’s cast iron cooking in St. Francisville, but fits right into our busy lives in New Orleans. Quick, creamy, and made in one skillet—it’s become a family favorite for good reason.
Ingredients
1 lb sirloin steak, cut into bite-sized cubes
Salt and black pepper, to taste
2 tablespoons butter
5 cloves garlic, minced
½ cup beef broth
½ cup heavy cream
½ cup grated Parmesan cheese
Fresh parsley, chopped for garnish
Instructions
1. Season steak cubes with salt and pepper.
2. Heat butter in a large skillet over medium-high heat.
3. Add steak bites in a single layer and sear for 3–4 minutes, turning once. Remove and set aside.
4. In the same skillet, sauté garlic for 30 seconds.
5. Deglaze with beef broth, scraping browned bits.
6. Add heavy cream and Parmesan cheese, stirring until thickened.
7. Return steak to pan, coat in sauce, garnish with parsley, and serve.
Notes
For best results, use freshly grated Parmesan.
Avoid overcooking the steak—medium to medium-rare works best.
Add red pepper flakes for a kick or mushrooms for added depth.
