Description
A naturally sweet, tangy, and versatile homemade dressing made with Medjool dates, balsamic vinegar, olive oil, and garlic—perfect for salads, grain bowls, and roasted veggies.
Ingredients
4 Medjool dates, pitted
1/4 cup balsamic vinegar
1/3 cup extra virgin olive oil
2 teaspoons Dijon mustard
1 small garlic clove
1/4 teaspoon sea salt
2–3 tablespoons water (to adjust consistency)
Instructions
1. Soak dates in warm water for 5–10 minutes if they’re not soft.
2. Add pitted dates, balsamic vinegar, mustard, garlic, salt, and 2 tbsp of water to a blender.
3. Blend until completely smooth.
4. While blending, slowly drizzle in the olive oil to emulsify the dressing.
5. Taste and adjust consistency with more water if needed.
6. Store in a sealed jar in the refrigerator for up to 7 days.
Notes
You can freeze leftovers in ice cube trays for longer storage.
For a spicier version, add a pinch of cayenne or crushed red pepper flakes.
