Description
A moist and protein-packed cottage cheese banana bread made with creamy cottage cheese. Easy, nourishing, and perfect for breakfast or a snack.
Ingredients
3 ripe bananas, mashed
¾ cup full-fat cottage cheese
2 eggs
⅓ cup melted butter
½ cup brown sugar
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
Optional: cinnamon, chopped walnuts, or chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5 loaf pan.
2. In a large bowl, mash bananas and stir in cottage cheese until mostly smooth.
3. Add eggs, melted butter, sugar, and vanilla. Stir to combine.
4. Sprinkle in flour, baking soda, and salt. Mix just until no dry streaks remain.
5. Fold in any add-ins like chocolate chips or walnuts.
6. Pour batter into the loaf pan. Smooth the top.
7. Bake for 50–60 minutes, until a toothpick inserted comes out clean.
8. Cool in pan 10–15 minutes, then transfer to a wire rack to cool fully.
Notes
Don’t overmix—gentle stirring keeps the bread soft.
Store covered at room temp for 3 days, or refrigerate up to 5 days.
Can be frozen in slices for up to 2 months.
