For my 46th birthday my husband treated me to a one-evening cooking course. It must have been one of the most enjoyable evenings I've ever had. This recipe is from that course. Plan to use this as a last 15 minute glaze on BBQed pork & chicken.Rick Bayless of Frontera Grill and Topolobampo restaurants used this recipe on his television series, "Mexico: One Plate at a Time" to add verve to roasted peanuts. Buy a 7-ounce can of chipotle peppers in adobo sauce in the Mexican food aisle. Refrigerate or freeze leftover chipotles and sauce for use in another recipe. This recipe is great for any meal - breakfast, lunch or dinner! It's light and flavoursome and would also make a great entrée.This recipe was printed in my mum's local free newspaper - the echo - down at the beach near queenscliffe & point lonsdale in Victoria Australia. My grandma used to make these mashed potatoes for me when I was a little girl. Sometimes she'd make a whole 5 lb dish and bring it to my house. Before she died she gave me the recipe. This is Southwest comfort food from Arizona. I didn't know until I moved here how much better dried beans are than canned and how fast they are to soak following tip provided in the directions. I was also introduced to the wonderful flavors of fresh cilantro and Hatch chilies.
