I'd been looking for a while for a good, wholesome and tasty chicken noodle soup without the chicken. Many of my friends are vegans and vegetarians, and since soup is my favorite comfort food, I thought that that having some dishes in my repertoire to cook for them was important. If you love PF Chang's Mongolian Beef, you'll love this vegan version. I make it for veg and non-veg people, and everyone agrees it's fantastic. I use organic and fresh versions of all of the ingredients. It's just better that way! Also, I have a big family, so this recipe makes a lot of food. This is a popular dish in North India, and is quick, easy and fuss free. Everyone has their own way of doing it, and this is the way i do it. When i am exhausted and too tired to do much else, i make this dish. Other people use a lesser amont of lentil to rice, but i use a 50/50 cos thats the way my husband likes it, moist. This is one I made from various recipes found here. It took a few variations to get it right and my amount on the spices may be a bit off as I don't actually measure anything when I cook but it can be adjusted to taste. Mild would be with 1 Jalapeno, medium, 2-3 Jalapenos and for most people 4-5 would be considered very hot. It also varies on size of Jalapenos. -- posted by Chef Donkey read more »
