I love that fall is here and that so many interesting squash types are available. Among all the different options, I have a fondness for acorn corn squash, it’s so sweet and has a very good flavor. You can use regular oatmeal or use a blender or spice grinder to turn part of it into powder--depends on the consistency you want. I typically grind half of it and leave half as-is.You could use coconut flour but I just use my spice grinder to turn regular unsweetened coconut into a powder. -- posted by Vegan4TheWin read more »

I found this recipe a few days ago on one of my foodie blogs, made it almost immediately, and I now have a new favorite. I'll be making this many times over until I'm sick of it, if that can be possible. Many years ago I used to be a vegan and went carnivore, but if I had had this around, I might have stuck with it a little longer. I alter the recipe here and there, and have posted a few changes. I haven't made this yet but will when I have a reason to have a lot of apple ice cream otherwise I'll eat it all myself- and that's not good for the diet! A great way to enjoy an old favorite, minus the chicken! Frozen, cubed tofu is used to mimic the chicken and impart protien into this wonderful, cold-chasing soup. Easy enough for a beginner chef, too. -- posted by merron-iru kami read more »

After some experimentation with the dough recipe, i think I got it right. Too much yeast made it puff up too much and none made it flat and heavy. The balance seems just right and it's really easy to make. I'm not good a doughs, and this turned out perfect. Also, stuff it with whatever you want, make it fun! If you're not a fan of soy analogs, don't use them! Pack it full of fresh veggies. This makes 2 large calzones or 4 smaller ones. -- posted by tendollarwine read more »
