This is my version of a recipe I saw Lidia prepare on her show. It's fast, filling, comforting, and adaptable. I make this about every 2 weeks or so, and it gets even better when reheated. And besides being fast, it's cheap to make. It's a whole meal in 1 bowl. I have made this soup with kale, spinach, escarole, beet greens, mustard greens, Swiss chard, and all are good. -- posted by #792246 read more »

This is a good healthy dish that I like to make for lunches at work. It's great cold. I believe it came out of some health magazine, I didn't create it. -- posted by Paul in Owens Cross Roads read more »

This is unbelievably delicious, and so easy! It is a simplified version of a WeightWatchers recipe. If you get a deal on the pork roast (we got ours from Costco) it works out to 50 cents a serving! -- posted by juniperwoman read more »
