This is very popular with my kids, although I admit that I don't always make them in individual portions. We always add the peas & use half the sugar called for. Sometimes we add a little finely chopped celery too. Annabell says about this recipe "Lentils are a good source of protein and iron for vegetarians and green lentils make a savoury and satisfying base for this shepherd’s pie." This is what I have come up with for shepherd's pie, after combining a few other recipes and adding my spin with my own mashed potatoes. I hope that you enjoy! Also, this can be frozen before the final baking and then defrosted in the fridge overnight before baking for approximately 45 minutes after placing the dish in a non-preheated 350 degree oven. -- posted by Dwynnie read more »
