This is a fantastic blend of southwest flavors and oozy cheeses. Very good. I would also add 4-6 oz. of cooked chorizo or other hot sausage to make this a one dish meal. To make it more colorful, add chopped red pepper or green onions after you take it from the oven. Rachel Ray is always joking about how she burns stuff in the broiler. The first time I made this, I set it on fire. No joke! The entire top of the macaroni had flames coming off it--I had to hit it with the back of a spoon to stop read more »

This comes from Rachel Ray's "Comfort Foods" 30-minute meals series. There are a bunch of corn chowder recipes here but I like the idea of Old Bay in this one. -- posted by ZeeCooks read more »

This is from the Everyday with RR magazine. Haven't made it, but it looks tasty. I adjusted some of the ingredients because they were confusing. This recipe was called "Triscuit Turkey Melts" by Rachael Ray but I prefer turkey brie cranberry bites as that really tells you what you are getting. This is an easy appetizer that would be great for the holidays, Thanksgiving, a dinner party at home or anytime you need a quick snack. Very cute and yummy! Watch the brie in the broiler. Enjoy! This traditional Irish dish is a combo of cabbage, potatoes and bacon. Rachel made and served this today on her show (aired Oct. 15th, 2008) paired with pork tenderloin - voila! Colcannon Rachael style. -- posted by Mommy Diva read more »
