This is awsome with homemade pitas, which you can also find on Zaar. It really makes alot, but it saves well in the fridge and is almost better the next day for leftovers. I like this recipe because it's a good way to get my family to eat vegies. My family doesn't like summer squash, but this is also good with squash sauted in with the other vegies. I was in the mood to try something new, and happily came up with this creation. It was a little more done up than a regular turkey sandwich, but still simple enough to make, and pleased the palettes of both my kids and husband! That makes it an instant success in this home =). This is a recipe I received from Penzey's along with a sample of their Pizza Seasoning. Tasty and filling, not to mention that pizza and diet don't normally go together, yet they do here. 1 oz. mozzarella and 1 oz. turkey per pita make them really low in fat and calories, 2 oz. each is still right in there for a healthy meal. This is my favorite pizza ever. The roasted goodness of the squash goes perfectly with the tang of the tomato sauce. It looks like a long ingredient list, but it's mostly spices.
