This is from my Cooking Light collection of recipes. It has amazing flavor and a nice crisp and crunchy texture. It pairs perfect with grilled meat, especially antichuchos. I found that this is also a perfect dish for a raw food diet or your vegetarian friends. -- posted by carmenskitchen

I like creating new appetizers, but they need to be quick and easy. These fill the bill, but you need to be warned: they are sweet yes, but more than that, they are hot! I found these peppers at a local Latin grocery and they come from Peru, so that is how the name was created. Buy the puff pastry on your way home and by the time you get through the rush hour drive, the pastry will almost thawed and ready to use. -- posted by OStreetGuy55

This is an interesting way of using Quinoa, a wonder grain that is thousands of years old. My wife resisted strongly when I introduced this grain into our household but now loves it. One of the nice things about it is that it cooks in 15 minutes from scratch so it is a time easy menu item. Make sure you rinse it well in water as it may be bitter.
