I got this from her "Crazy Sista Cooking" book. She is Jimmy Buffett's sister. I know there a gazillion jerk recipes on here but I like this one because it's so simple, I always have the ingredients on hand, you only need 2 measuring spoons, and it keeps well. I usually leave out the orange and lemon peel granules and it's still great. I've baked, grilled and kabobed (I think I just made a new word) chicken with this. This recipe for jerk sauce is courtesy of Ray's Hideaway Restaurant and Taxi Stand, Montego Bay, Jamaica. It's fiery, but not incendiary, full of flavor, and worth the effort to make it. I got the recipe from The Early Show on CBS. The chicken needs to marinate 4-8 hours so start early. :D -- posted by Sharon123 read more »

I am an idiot. Last year I GLUED all my weight watchers recipes out of weight watchers magazines into an exercise book. Come this year when I am given not one but two recipe folders to hold snippets out of magazine I have to try and unglue them. The result is not successful. So I am putting them on recipezaar to print them out to organise them, damn last years OCD. This is a Weight Watchers recipe. Its a delicous alternative to hamburgers. The salsa adds a slightly sweet touch to tame the heat of the jerk seasoning. The salsa can be prepared up to one day in advance and refrigerated until ready to use. -- posted by lb1966 read more »

This is a great Jamaican Rub recipe that is nice with poultry and pork. You can adjust the spicyness by increasing or decreasing the amount or type of crushed peppers. For a "not so hot" rub, use crushed red peppers. For a "really hot" rub, use dried scotch bonnet peppers. -- posted by Pink Diamond read more »
