This is a versatile, old time favorite recipe of mine, probably from the 1950s, which utilizes your summer bounty of zucchini in several different ways. The "zucchini base" recipe can be used to make other dishes such as: ZB Lunch Cake, ZB Cookies, and ZB Pie. This recipe makes 3 quarts of base; the cake uses 1 cup of ZB, the cookies use 1 cup, and the pie uses 2 cups. Obviously not a light recipe. I plan to experiment with low-fat/fat-free ingredients, but for now this is my go-to dressing recipe. I use this as a base and adjust seasonings and amounts for the vinegar and buttermilk based on the purpose of the dressing (salad, dip, spread). It's a extremely versatile and better than anything we've tried from a jar. Try the Spicy Ranch version as a dip for french fries. -- posted by jessica_six read more »
