Apart from Christmas Pudding, nothing says Christmas more than the fragrance of freshly baked Fruit Mince Pies. Instead of doing a typical recipe with dates, sultanas and cherries, I decied to use the native fruits of Australia. The recipe uses Quandong, Riberry, Rosella, Wild Limes together with granny smith apples. They are great by themselves, but do try with Lemon Myrtle Custard.

1 fresh Anaheim chile pepper
4 ears fresh corn, husked or 2 cups frozen kernels
3 cups low-sodium vegetable broth
4 ounces firm tofu, drained, and cut into 1/4" cubes
