My favorite restaurant is Chipotle - hands down but I moved far away from it and now the closest is over 2 hours away. So this guacamole is my tribute to Chipotle's - it's not exact, but very close. This quesadilla is a nice light option for lunch when you are dieting. [Remember avocados are high in fat/calories, but very beneficial to your health!] By my calculations, each serving is around 300 calories. It doesn’t get much better’n this. Besides being remarkably easy to make (thanks to the crockpot), once chilled, this food from the Gods becomes super dense, like the center of an incredible chocolate bon bon.
