Pork Pie is a standard Christmas Eve or New Year's Eve treat in my predominantly French-Canadian hometown in Maine. It's served with catsup or mustard, tossed salad, and pickles. Simple but wonderful. Top individual servings with catsup or mustard before serving.

Alpine Pepper Jus is the ultimate pepper sauce. Unlike regular pepper sauce which often has a strong pepper burn flavour, Alpine Pepper Jus has a subtle pepper heat. Made from Alpine Pepper from Tasmania, the pepper is well known for its fragarant aroma and is a great sauce for both lamb or beef dishes.
Makes 1lt
1 bottle of quality red wine (750ml)
1 onion, fine diced
1/4 bulb garlic
1 bouquet garni
8lt beef stock
salt to taste

So you've spent the afternoon prepping and cooking and don't feel like making a dessert, but would like to have one anyway? Then this does the trick. Super easy, super quick, and fucking awesome. The sweetness of the strawberries cut with the bite of the black pepper is an unbelievable taste. Jessica and Peter asked me to do this for the dessert at their wedding.

Whilst working at the Duxton Hotel in Singapore I was inspired by a French chef who used to make dish he called Coffee Beef. The dish does sound unusual, however my version using wattleseed is rather subtle compared to the over powering strong coffee aromas
that his dish produced. I first did this dish whilst guest chef onboard the Regent Seven Seas Mariner cruise ship in November 2006 and was the most popular main course for the evening. Well worth a try.

Remember growing up and always hearing from so-and-so's mom or grandma that a good pasta sauce has to cook for hours and hours and hours to be any good? Don't believe it - this one takes about 25 - 30 minutes, and can be served alone over pasta, or used to make eggplant parmesean or lasagne, and it kicks ass.
